A Day of Healthy Vegan Meals

Between work and being a mommy to three boys, sometimes it’s hard to find the time to prepare healthy meals for myself. I have come up with several go-to meals that are budget friendly, simple and delicious.



– Scrambled Tofu with Mushrooms and Spinach

– 100% Whole Wheat Bread (you can find my bread machine recipe here)


-Green tea

This hearty breakfast is great for those cold fall and winter months.


Snack #1



-Green Tea (I sorta have an obsession with green tea at the moment!)

This is a great healthy snack to help you get through the morning until lunchtime. I would recommend purchasing raw or dry roasted nuts so you can reap all the nutritional benefits from them.



-Mixed Greens



-Green Peppers




-Pinto Beans

This could loosely be named a southwest salad. All I did was add the above ingredients to a mason jar. I made a dressing out of Just Ranch dressing mixed with a tablespoon of Cholula Chipotle hot sauce. I didn’t have any of those cute tortilla strips on hand, so I just crushed up some tortilla chips for the topping.

Snack #2




I ALWAYS need a snack in the afternoon to boost my energy. What about you? If I don’t eat a little something around 2 or 3pm I start dozing off at my desk!




-Brussel Sprouts


-Green Beans

-Yellow Potatoes

-Fresh Garlic

These roasted veggies are to-die-for! Cut them up and add to a pan with olive oil, season salt and pepper. They took about 30 minute at 450 degrees to bake. Make sure you stir the vegetables about half-way through. I added black beans to the top to make it a complete meal.
