Who doesn’t love tacos!?! These vegan tacos are healthy and delicious. The avocado cream is creamy and delicious. Dipping the tacos in the spicy salsa verde is the perfect addition to this dish.

Add tablespoons of water to your masa powder until it all sticks together, but is not wet. Roll out 2 tbs of dough into a thin circle about 4 inches in diameter (or you can use a tortilla press if you have one.) Fry in a pan on medium high with a little oil until light brown spots start to appear on both sides.
Chop the red tomatoes, onions, half of the hot pepper and cilantro into small pieces (or use a food processor.) Voila! You can add salt and garlic powder if you want, but I’m a fan of the natural flavor with no spices.
Add the avocado (obviously peel and take out the pit… do I need to say these things… I don’t know!) to a blender with the flax milk. Blend until creamy with no lumps. Once again, add seasoning if you like. This stuff is superb!
Add the tomatillos, onions, cilantro, other half of the hot pepper, salt and garlic powder to your food processor or blender and pulse until desired consistency. Add to a pan on medium heat and cook for about 5 minutes. The salsa will turn a different color green when the tomatoes are cooked. Refrigerate until cold.
Squeeze excess water out of the tofu (either with a tofu press or your hands.) Add to a pan with a tsp. of oil and a Tbs. of taco seasoning. Fry on medium high for 5-7 minutes.
Plate your tacos and enjoy!!!
